Spaghetti Squash and Kale Quiche
Serves: 6
INGREDIENTS:
2 cups cooked spaghetti squash
2 egg whites
1 cup chopped kale
2 tablespoons parmesan cheese
salt, pepper and garlic powder to taste
DIRECTIONS:
Preheat oven to 350˚F.
Combine all ingredients in a bowl.
Spray a non-stick muffin tin with organic cooking spray.
Pour mixture evenly into muffin tins (makes 6).
Bake for 20-25 minutes until set. Enjoy!
