Quinoa Bites
INGREDIENTS
:
1 ½ cup cooked quinoa
2 large eggs
1 green onion stalk, diced
1 clove garlic, minced
½ cup shredded parmesan cheese
2 Tbsp. fresh parsley chopped
2 Tbsp. almond flour
¼ tsp sea salt
1/8 tsp ground pepper
½tsp fresh lemon juice
1 tsp organic olive oil
DIRECTIONS:
Preheat oven to 350 F.
Mix together all ingredients in a medium bowl
Spray a mini muffin tin with olive oil
Scoop a tablespoon into each mini muffin cup
Bake for 20 minutes
Serve hot or freeze and reheat
