Quinoa Bites

INGREDIENTS:

  • 1 ½ cup cooked quinoa
  • 2 large eggs
  • 1 green onion stalk, diced
  • 1 clove garlic, minced
  • ½ cup shredded parmesan cheese
  • 2 Tbsp. fresh parsley chopped
  • 2 Tbsp. almond flour
  • ¼ tsp sea salt
  • 1/8 tsp ground pepper
  • ½tsp fresh lemon juice
  • 1 tsp organic olive oil

DIRECTIONS:

  1. Preheat oven to 350 F.
  2. Mix together all ingredients in a medium bowl
  3. Spray a mini muffin tin with olive oil
  4. Scoop a tablespoon into each mini muffin cup
  5. Bake for 20 minutes
  6. Serve hot or freeze and reheat
